We had the privilege of visiting Finca Chico this year, where we experienced firsthand the passion and innovation of Francisco “Chico” Rojas Camacho — a renowned Costa Rican producer known for crafting exceptional, sustainably grown Arabica coffees.
This lot features Chico’s celebrated Yellow Honey Process, in which a thin layer of sweet, sticky mucilage is intentionally left on the bean after depulping. The coffee then dries quickly under the warm Costa Rican sun, allowing the natural sugars to lightly ferment and create a cup profile that sits beautifully between washed and natural coffees — clean, fruity, and gently sweet. As it dries, the parchment takes on a soft golden hue, lending the process its name.
The result is a vibrant yet balanced cup with notes of orange marmalade, sweet honey, and a juicy, rounded sweetnessthat lingers with every sip.
A special highlight of this coffee — we had the opportunity to bring one of our wholesale partners with us to the farm to select this lot together, making this release truly collaborative and close to home.
